Grilled eggplant with basil, tomato, and cheese

Grill eggplant (marinated in olive oil, garlic, salt, and pepper)

Slice tomatoes.

When Eggplant is done, layer it: eggplant, tomato, cheese (ricotta, goat cheese, or I used garlic and red pepper boursin), and basil.
