Made these for Thanksgiving, and they were a huge hit, and so easy to make!!
Ingredients
▢2 lbs carrots peeled and chopped into ½ inch pieces
▢1 cup water
▢2 tablespoons unsalted butter
▢2 tablespoons honey
▢¼ teaspoon salt
▢1 teaspoon fresh thyme leaves or ¼ teaspoon dried thyme leaves
Instructions
- Combine - Place 1 cup of water in the bottom of the stainless steel insert of the Instant Pot. Add trivet on top. Place carrots on a trivet (it's ok if some fall through).
- Pressure cook - Put the lid on Instant Pot and turn the valve to 'sealing'. Cook on manual high pressure (or 'pressure cook') for 2 minutes.
- When Instant Pot beeps, immediately release the pressure.
- Transfer - Remove the lid and carefully transfer the carrots to a clean bowl. Carefully pour out the liquid from the Instant Pot.
- Sautée - Select sautée. Add the butter, honey, salt and thyme. Simmer for 1-2 minutes, until slightly thickened.
- Serve - Add the carrots back to the Instant Pot, toss in the sauce, and serve.
